Cheesy Homemade Hamburger Helper

This cheesy homemade hamburger helper is a cozy meal you can make from scratch with simple pantry ingredients, one pot and only 30 minutes.

Ingredients
  

  • 1 lb lean ground beef Note 1
  • 2 teaspoons kosher salt Note 2
  • 2 tablespoons all purpose flour
  • 1 lb elbow macaroni
  • 2 cups low-sodium beef stock
  • 3 cups of water
  • 4 oz cream cheese
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Mozzarella cheese

Instructions
 

  • Heat a large dutch oven over medium high heat
  • Add ground beef and salt. Cook the beef until mostly brown, stirring frequently, about 3 minutes. Drain excess fat, if needed.
  • Add flour and stir well.
  • Then stir in macaroni, broth and water. Cover.
  • Simmer over medium low heat until macaroni is soft, 8-10 minutes.
  • Remove from heat, and add the cheeses. (Experiment with different cheeses that suit your palate). Cover and let sit for 2-3 minutes.
  • Stir well and serve.
  • Store the leftovers in an airtight container in the refrigerator for up to 3 days. To rehear, add a splash of milk and microwave until nice and hot, about 2 minutes.

Notes

Note 1: Substitute ground beef for ground turkey or ground chicken.
Note 2: This may sound like a lot of salt. But remember we're cooking a lot of pasta here.
