Here's my best nachos recipe for satisfying weeknight dinner in less than 15 minutes!!! How to prevent soggy chips, the best chips for nachos and more.

Ingredients
  

  • Corn tortilla chips
  • Leftover bbq pulled pork or chicken
  • Black beans rinsed and drain
  • Grated cheese like sharp cheddar
  • Quick pickled onions
  • Cherry tomatoes halved
  • Fresh jalapeno seeded and sliced, optional
  • Fresh lime wedges
  • Fresh cilantro

For serving:

  • Salsa
  • Sour cream
  • Guacamole

Instructions
 

  • Preheat the oven to 400°F.
  • Arrange chips in one layer on a baking sheet. Evenly distribute pulled pork over chips, black beans, cheese and pickled onions. Make sure each tortilla chip has cheese.
  • Bake the nachos for about 10 minutes, or until cheese is melted.
  • Top with cherry tomatoes, jalapeno and cilantro. Squeeze lime juice all over and serve immediately with salsa, sour cream and/or guacamole.
