Dorito Taco Casserole

Dorito taco casserole is an easy weeknight dinner that's ready in 40 minutes! Seasoned ground beef is layered with melty cheese and crushed Doritos then topped with sour cream, avocado, and salsa. It's easy, budget-friendly, and picky-eater approved.

Ingredients
  

  • 1 pound ground beef Note 1
  • 1.25 ounce taco seasoning packet
  • 1 tablespoon olive oil
  • 1 red bell pepper diced
  • 2-3 jalapenos diced
  • 1 small onion diced
  • 1 cup frozen corn
  • 3 cloves garlic minced
  • 3 tablespoons hot sauce Note 2
  • 2 cups salsa store-bought or homemade
  • 1 9.25 ounce bag Nacho Cheese Doritos Note 3
  • 2 cups shredded colby jack

Toppings (Optional):

  • cilantro, avocado, diced tomatoes, sour cream, shredded lettuce, jalapenos, limes

Instructions
 

  • Preheat the oven to 350℉ and prepare a baking dish with non-stick cooking spray.
  • In a large skillet over medium high heat, brown the ground beef until completely cooked. Add the taco seasoning half way through cooking. Remove the ground beef from the pan and set aside.
  • In the same large skillet, add the olive oil heat over medium heat. Add the bell pepper, jalapenos, onion and corn. Sauté until softened.
  • Add the cooked ground beef, garlic, hot sauce and salsa. Mix and cook over medium heat until simmering and thickened slightly. Remove from the heat and set aside.
  • To the baking dish, add a layer of crushed doritos to the bottom of the dish and sprinkle on some cheese. Next, add half of the ground beef mixture, another layer of crushed doritos and cheese. Lastly, add the remaining ground beef mixture and sprinkle with the rest of the cheese.
  • Bake for 20 minutes until hot and bubbly. Remove from the oven and top with remaining crushed doritos and bake for another 5 minutes.
  • Let cook for 5 minutes before serving. Top with any combination of toppings. Enjoy!

Notes

Note 1: I recommend ground chuck or ground round. For a leaner option, use ground sirloin or ground turkey. You can also sub in cooked, shredded chicken! 
Note 2: For a mild casserole, omit the hot sauce! 
Note 3: Use any flavor of Doritos that you want. Nacho cheese is a classic flavor that everyone loves. 
Storing Tips: 
- Store any leftover taco casserole in an airtight container in the refrigerator for up to 3 days.
- Reheat in the microwave for 30 to 60 seconds until hot throughout, or in the oven at 350 degrees Fahrenheit until hot and bubbly, about 15 minutes.
- You can freeze this taco bake, but you will lose the texture of the Doritos. Transfer to a freezer-safe container and freeze for up to 3 months. Let thaw in the refrigerator overnight, then bake in a 350 degree oven until hot throughout.
