When I made our favorite mashed potatoes fit for a great gravy topping, after boiing five or six peeled Idaho potatoes I drained the boiling water from the potatoes, keeping the stove burner on low.
Then I used a Sunbeam hand mixer with its cutting motion beaters to bash a the steam out of the potatoes, while adding chunks of salted butter to them to melt in that steam. I stopped the hand mixer when the bottom of the pot was dry, like a pot used for making pate a choux.
No soggy, sloppy potatoes for my family! Instead they were creamy, buttery and cohesive; but free of lumps. It was a quick process which I devised to get very hot mashed potatoes to the dinner table as speedily as possible.
