HOW TO SLICE MEAT THINLY:
Step 1. Freeze the meat
Line a plate or baking sheet with a parchment or wax paper. This’s important, because if you place the meat directly on a plate or baking sheet, meat will stick to it and you won’t be able to remove it easily.
Place the meat on the prepared plate and freeze it for about 30 minutes, or until firm. The meat should not be frozen solid. It should be half frozen, meaning you won’t be able to bend it, but you can slice through it. The exact freezer time depends on how thick your meat is.
Step 2. Slice the meat
Bring the half-frozen meat out on a cutting board and carefully slice it with a sharp knife against the grain. It’s almost like shaving the meat. It’s quite satisfying process actually, when the meat is at just the right firmness.
