Easy chicken fajitas doesn’t have to take hours of marinating! Cutting the chicken into strips helps cut down on marinating and cooking time. It’s also easy to customize this simple dish with different vegetables and change things up with various garnishes! These easy chicken fajitas definitely should be in your weekly dinner rotation.

Homemade taco seasoning mix:
- 1 teaspoon salt
- 1 teaspoon ground cumin
- ½ teaspoon oregano
- ½ teaspoon garlic powder
- ½ teaspoon chili powder
- ½ teaspoon paprika

Easy Chicken Fajitas
Ingredients
- 1 lb chicken breast or thighs, cut into strips
- 2 tablespoons vegetable or canola oil
- ½ red onion
- ½ red bell pepper
- ½ yellow bell pepper
- 2 garlic cloves pressed
For chicken marinade:
- 2 tablespoons vegetable or canola oil
- Juice of 1 lime
- 1 ½ tablespoon taco seasoning Note 1
- ¼ cup chopped fresh cilantro
For serving:
- Chopped fresh cilantro
- Lime wedges
- Rice/ tortilla
- Sour cream salsa, and/or guacamole
Instructions
- In a medium bowl, combine chicken, oil, lime juice, taco seasoning and cilantro. Mix everything, cover and marinade for 10 minutes, or up to overnight. If preparing ahead, cover and refrigerate it until ready to use.
- In 10-inch skillet, heat oil over medium high heat.
- Add onion, peppers and garlic and sauté until they’re nice and tender, about 6 minutes.Remove onto a clean plate.
- Add chicken into the same skillet, and cook until cooked through, about 5 minutes. If there’s too much liquid in the skillet, drain it. Otherwise, the chicken will be steamed, not seared.
- Once the chicken is cooked, add the vegetables in and toss to combine.
- Serve on toasted tortillas with sour cream, guacamole, and lime. Or you can also serve it over steamed rice.
